What’s for dinner!

So, I’ve decided to do some meal planning – with the main reason being to save money and eat a bit healthier. Since my job with the campaign last year, we’ve been “living on convenience” and that means “EATING on convenience.” But so far this month, I think we’ve done a pretty good job. Minus last night and the day before. 😉 Ryan has CareNet on Monday evenings until 8:30PM and last night we both attended a CareNet training and grabbed something (SONIC!) on the way – PLUS toss in a sick lady (me) with a cold – I wasn’t feeling super pumped up about making meals earlier this week. BUT, I made up for it today and cooked both Monday’s and Tuesday’s dinner. AHH, the coconut, butternut squash soup is absolutely delicious. SO much flavor…. Here’s a peek at this past week’s meals…
